French Dip Roast Beef Sandwiches

French Dip Roast Beef Sandwiches
Equipment
- crock pot
Ingredients
- 3-4 lb beef chuck roast
- 1 beef bouillon cube
- 1 bay leaf
- ½ teaspoon rosemary
- 1 teaspoon thyme
- ½ teaspoon pepper
- 1 teaspoon garlic powder
- ½ cup soy sauce or Bragg’s Liquid Aminos
- 10-12 sandwich rolls
- Provolone or Havarti cheese optional
Instructions
- Place the chuck roast in the slow cooker. Add the bouillon cube, bay leaf, rosemary, thyme, pepper, garlic powder, and soy sauce. Add enough water to cover the roast.
- Cover and cook on LOW for 6–8 hours, until the beef is tender.
- Turn off the slow cooker and remove the roast. Cover loosely and let cool for approximately 10 minutes.
- Shred the beef using two forks.
- Serve the shredded beef on sandwich rolls with optional cheese. Ladle the cooking broth into small bowls for dipping.
Notes
- Keep the beef moist: Cover the roast while it cools to prevent it from drying out.
- Choose your favorite rolls: Most of my family prefers a crustier roll, but I like a softer one. Ciabatta bread is a great alternative if you can’t find sub-style sandwich rolls.
- Storing leftovers: Add a little au jus (the cooking broth) to the shredded beef before refrigerating to help keep it moist.
