Cottage Potato Pie

Cottage Potato Pie
Cottage potato pie is a hearty, savory dish that turns humble mashed potatoes into something special. Creamy potatoes whipped with cottage cheese and sour cream are layered with melty Swiss cheese in a flaky pie crust brushed with tangy mustard for a subtle kick. Topped with fresh tomato slices and a sprinkle of Parmesan, it bakes up golden and beautiful. Serve it as a comforting meatless main dish or an impressive side for holiday dinners and family gatherings.
Ingredients
Ingredients
- 6 medium potatoes
- 2 cups cottage cheese
- ½ cup sour cream
- ½ teaspoon salt
- â…› – ¼ teaspoon black pepper
- 2-3 tablespoons Dijon mustard
- 4 oz Swiss cheese
- 2 tablespoons butter
- ½ cup Parmesan cheese
- tomato slices
- 1 unbaked pie shell
Instructions
Directions
- Peel, slice and boil potatoes. Mash well.
- Combine mashed potatoes with cottage cheese, sour cream, salt, and pepper.
- Spread mustard in pie shell. Using the back of a small spoon to spread works very well.
- Fill with half of potato mixture. Layer with Swiss cheese. Top with remaining potato mixture.
- Dot with butter. Sprinkle with Parmesan.
- Bake at 375° for 40 minutes.
- Arrange tomato slices in a single layer on pie. Return to oven for 10 more minutes.
- Allow to cool for a minimum of 20 minutes before serving.
Notes
Tomatoes: Use ripe, flavorful tomatoes such as beefsteak but smaller Roma tomatoes work just as well.
Cool Down: Allow to cool for a minimum of 20 minutes. Servings the pie too hot will allow the potato filling to pour into the empty space in the pie dish.
