Ingredients

  • 2 cups all-purpose flour for the batter
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • 6 tablespoons butter melted
  • 2 cups buttermilk with fresh blueberries; use 1 3/4 cups instead with frozen blueberries
  • 1 teaspoon vanilla
  • 1 cup blueberries fresh or frozen
  • 2 tablespoons all-purpose flour for coating the blueberries

Instructions

  • Combine the 2 cups flour, sugar, baking powder, and salt. Set aside.
  • Beat the eggs. Combine with the melted butter, buttermilk, and vanilla. Use 2 cups buttermilk with fresh blueberries, or 1 3/4 cups with frozen blueberries.
  • Toss the blueberries with the remaining 2 tablespoons flour until well coated.
  • Combine the flour mixture with the egg and buttermilk mixture. Stir until well mixed. Gently fold in the blueberries. Let the batter rest for 5 minutes.

  • Cook the waffles according to your waffle maker’s instructions.

Notes

Makes approximately 3 3/4 cups batter. The number of waffles and cooking time depend on your waffle maker.
Use 2 cups buttermilk with fresh blueberries OR 1 3/4 cups with frozen blueberries; do not add both amounts. Frozen blueberries release moisture as they thaw.
Coating the blueberries in flour helps keep them suspended in the batter.
Let the batter rest for 5 minutes, and fully preheat your waffle maker before cooking.
