Chocolate Earthquake Cake

Chocolate Earthquake Cake
Chocolate earthquake cake is a gloriously messy dessert with a delicious surprise in every bite. A rich, moist chocolate cake bakes around swirls of sweet cream cheese filling, creating gooey pockets that “crack” the surface like the aftermath of an earthquake. Mini chocolate chips melt throughout, while a layer of coconut and nuts bakes right into the bottom of the pan. Serve each piece upside down so that toasty coconut-nut layer becomes a chewy, crunchy topping. It’s an indulgent showstopper for potlucks, birthdays, and anyone who loves German chocolate cake with an extra twist.
Ingredients
Cream Cheese Mixture
- 4 cups powdered sugar
- 8 oz cream cheese softened
- 1 stick butter melted
Coconut and Nut Layer
- 1 cup shredded coconut
- 1 cup chopped pecans or walnuts
Cake
- 1 box Devil’s Food cake mix
- 3 eggs
- 1 ⅓ cups milk
- 1 stick butter melted
- 1/3–1/2 cup mini chocolate chips
Instructions
- Preheat the oven to 350°F. Spray a 9 × 13-inch pan with cooking spray.
- Beat the powdered sugar, softened cream cheese, and 1 stick melted butter together with an electric mixer. Set aside.
- Sprinkle the coconut and chopped nuts evenly over the bottom of the prepared pan. Set aside.

- Mix the cake mix, eggs, milk, and 1/2 cup oil or melted butter with an electric mixer. Pour over the coconut and nuts and spread evenly.
- Place dollops of the cream cheese mixture over the batter. Sprinkle with mini chocolate chips.

- Bake for 40–42 minutes. Do not overbake! The cake may seem jiggly at first but will set as it cools.
- Cool for 20 minutes before removing from the pan, or leave it in the pan and serve from there. Serve pieces upside down with the coconut-nut layer on top.
