Homemade Caramel Corn

Homemade caramel corn is a sweet, crunchy treat that’s impossible to stop snacking on. Fresh popcorn is tossed in a rich, buttery brown sugar caramel, then baked low and slow with regular stirring so every piece gets an even, glossy coating. As it bakes, the caramel sets into a crisp, crackly shell that’s far better than anything from a bag. It’s perfect for movie nights, game days, holiday parties, and packaging up in jars or bags for festive homemade gifts.

Ingredients

  • 1 cup unpopped popcorn
  • 2 cups brown sugar
  • 2 sticks butter
  • ½ cup light corn syrup
  • 1 teaspoon salt
  • 1 teaspoon butter flavoring
  • ½ teaspoon vanilla
  • 1 teaspoon baking soda

Instructions

  • Preheat the oven to 200°F. Pop the popcorn and place in a very large oven-safe pot or pan.
  • Melt the butter in a heavy pot. Add brown sugar and corn syrup, bring to a boil, and cook for 5 minutes.
  • Stir in salt, butter flavoring, and vanilla. Stir in the baking soda; the mixture will foam, so work quickly.
  • Pour over the popcorn and stir gently but thoroughly until evenly coated, taking care not to crush it.
  • Bake for 1 hour, stirring every 15 minutes. Spread on wax paper to cool. Store in a large bowl or resealable bags.
